Fumagalli Curing

Only Parma Ham DPO which has undergone a series of rigorous controls throughout the production process is allowed to wear the ducal crown.

These controls are carried out by the Parma Qualità Institute. Rubens Piazza, in charge of curing Parma Ham DPO at Fumagalli, explains the stages the ham goes through to make it the king of Italian cured meats.
